Gino Fabbri is a renowned Italian pastry chef. With a distinguished career that began at the age of 13, he founded the pastry shop "La Caramella", now known as "Gino Fabbri Pasticcere", and has received numerous awards, including the title of Pastry Chef of the Year in 2009; he also served as President of the Italian Academy of Pastry Masters.
Gino Fabbri was born in 1951 in Castenaso, a town in the province of Bologna. From a young age, he showed a strong passion for the art of confectionery, inspired by his grandmother. At the age of 13, during a summer, he began to work in the pastry shop of his town, where he discovered the fascination of aromas and flavors that would characterize his career.
In 1982, together with his wife Morena, he decided to move to Bologna to open his own shop, La Caramella. Located far from the center of the city, it stands out for the high quality of its products and its attention to the customer. In 2003 it was renamed Gino Fabbri Pasticcere, consolidating his personal brand.
Over the years, Fabbri has attended courses with important Italian masters, including Iginio Massari, expanding his skills and refining his art. In 1996, he joined the Italian Academy of Pastry Masters, a prestigious association that brings together the best in the country. In 2011 he became its president, a role he holds with dedication.
In 2000, he won the Jubilee Cake competition, an occasion that allowed him to meet Pope John Paul II. In 2009, he was elected Pastry Chef of the Year by his peers, a recognition of his professionalism. In 2015, he led the Italian team of Emanuele Forcone, Francesco Boccia and Fabrizio Donatone to victory at the Pastry World Cup in Lyon.
Gino distinguishes between "pastry of affection" and "pastry of effect", preferring the former, which evokes memories of his family. In addition to production, he is dedicated to education, sharing his knowledge through courses and seminars, contributing to the growth of new generations.
