Chiara Pavan, born in Verona in 1985, has embarked on a journey that today positions her as one of the leading figures in Italian cuisine. After graduating in Philosophy from the University of Pisa, she discovered a passion for cooking that led her to leave an indelible mark in the gastronomic world.
Biography
Chiara Pavan's career winds through numerous experiences before reaching its peak at the Venissa restaurant on the island of Mazzorbo, in the lagoon north of Venice.
After graduating in Philosophy, she serendipitously discovered her calling for cooking while working in kitchens during her university studies. She then enrolled at ALMA, where she began to delve into haute cuisine. Her approach, described as "environmental," focuses on sustainability and the use of organic, locally-sourced products.
Along with her partner Francesco Brutto, Chiara Pavan offers an ethical and environmentally respectful menu, drawing directly from the products of the lagoon territory. Throughout her career, the chef has received several accolades, including the Cook of the Year award from L’Espresso and Chef Internacional from Elle Spain, in addition to being named Best Female Chef by Identità Golose.
Her cuisine is distinguished by meticulous attention to plants and minimizing waste in all forms, as well as the use of preservation techniques like fermentation.
