After several decades as a gastronomic critic, Bruno Verjus traded his pen for a chef's jacket in 2013. His restaurant "Table" in Paris holds Two MICHELIN Stars and a Green Star, and it ranked tenth in The World's 50 Best Restaurants list in 2023.
Born in 1959 in Roanne, after years of being a sharp and never mundane gastronomic critic who never hesitated to speak uncomfortable truths, he left writing behind to open his own restaurant. In 2013, at the age of 54, Bruno Verjus used his accumulated experience as a discerning customer as a launchpad for "Table" in Paris.
A connoisseur and lover of France, its regions, products, and producers, in his restaurant he embodies the idea that "food is culture," just as he did in his role as a journalist on his blog Food Intelligence.
The restaurant garners enthusiasm from Bruno's industry friends, chefs and journalists who rejoice in his success, as well as from critics: the first MICHELIN Star arrived in 2018, followed by the Green Star in 2020, and the second MICHELIN Star in 2022.
Bruno is primarily an advocate for straightforward, clean, and raw flavors, expressed through a coherent and human cuisine that reflects the vitality of seasonal products: "A product is the sacred alliance of a material and a character. It's the best that nature, together with humans, can offer. The art of nourishment is founded on respect for products and producers."
In 2021, he publishes the book "The Art of Nourishment," in which he retraces the unusual journey that led him to the heights of gastronomy. He reflects mainly on the art of exploring flavors, the importance of sharing, and the duty of transmission. In 2023, "Table" ranks tenth in The World's 50 Best Restaurants list, not only for the quality of its dishes but for the entire customer experience that it offers. After all, its chef has been on the side of the eater for 50 years.
