Riccardo Camanini, born in Bergamo in 1973, embarked on his culinary journey by obtaining a cooking diploma from the Hotel Technical Institute in Darfo Boario Terme, near Brescia.
In the 1990s, his career blossomed through a collaboration with the school of Gualtiero Marchesi, an opportunity that allowed him to experiment with a new way of cooking.
He then gained experience at "Albereta," a MICHELIN Star restaurant, for two and a half years before expanding his horizons with significant international experiences.
He delved into the principles of classic French cuisine at the Two MICHELIN-starred restaurant "Belmond le Manoir aux Quat Saison" in Oxford, under the guidance of chef Raymond Blanc. Subsequently, he had the opportunity to work in Paris at the "Ristorante La Gand Cascade" with chef Jean Louis Nomicos, playing a key role in the kitchen brigade, with direct consultation from Alain Ducasse. During these years, he also spent shorter periods at other prestigious restaurants, including "Lucas Carton," a MICHELIN-starred restaurant, "Taillevent," a Two MICHELIN Stars establishment, and "Potel & Chabot," where he gained experience in catering.
Since 1998, Camanini has been the executive chef at "Villa Fiordaliso" on Lake Garda. Then, in March 2014, he decided to embark on a new path. He opened the restaurant "Lido 84" in Fasano del Garda with his brother Giancarlo, who transitioned from a business manager to a maître d'. Just six months after its opening, the restaurant was awarded a MICHELIN Star, and later, Three Forks by Gambero Rosso.
In 2016, Riccardo published his book "Segni di stelle. Percorsi culinari in Valle Camonica," and in 2019 and 2023, he was a guest judge on the television program "MasterChef Italia."
Camanini is considered one of the most influential contemporary chefs in the ideological revolution of Italian Haute Cuisine. He received the prestigious "One to Watch Award" in 2019 from William Drew, director of The World's 50 Best Restaurants, a ranking in which "Lido 84" reached 8th place in 2022.
His passion for history, particularly the works of gastronome Apicius (active between the 1st century BC and the 1st century AD), and literature, especially James Joyce, influence Riccardo's approach to cooking, making him a visionary in culinary experimentation. Iconic dishes have been born in the kitchen-laboratory of "Lido 84," the result of his incessant research.
