Floriano Pellegrino's recipe: Beans with eye and sage
Ingredients for 4 people
For the sage broth
- 5 l water
- 5 g dried porcini mushrooms
- 300 g fresh sage
- 60 g kombu seaweed
Procedure
For the sage broth, cold infuse the water with the seaweed overnight.
Bring to first boil and remove the seaweed. Add the mushrooms and simmer for a few minutes.
Add the sage and pack tightly. Allow to steep for 2 hours.
Strain. Clarify with egg white. Freeze and thaw.
For the beans
- 400 g beans with eye
- 60 g beans
- 80 g sage broth
Procedure
Soak the beans for 8 hours. Then cook in broth with pressure cooker for 15 minutes.
Dish composition
At the time of serving temper the beans with hot water, strain and serve with sage broth laced with soy, chives and soy essence.
