Riccardo Camanini's recipe: Smoked and fried lake sardine, honey, elicrisium, chartreuse and citrus
Ingredients for 4 people
- 4 lake sardines
- 24 g flavored honey (see recipe)
- Various field herbs (Indian mustard, cress)
For the flavored honey
- 100 g acacia honey
- 12 ml bergamot juice
- 2 chopped bergamot peel
- 2 chopped sprigs of elicrisium
- 1 g guerande salt
Procedure
For the flavored honey
Combine all ingredients except bergamot juice and let steep over high heat. Add the bergamot juice off the heat and allow to cool.
For the sardines
Marinate in groppello vinegar and smoke.
Dish composition
Fry the sardines, drizzle with honey and top the dish with the field herbs also drizzled with honey.
