Recipe of Giuliano Baldessari: Charred Cream
Ingredients for 6 people
- 350 ml of cream
- 150 ml milk
- 25 g sugar beet molasses
- 6 charcoal tablets
- 100 g pasteurized egg yolks
- 35 g sugar
Procedure
Boil the cream, milk, molasses and tablets, cool to about 80°C (176°F).
Pour the mixture over the 100 g pasteurized yolks and 35 g sugar. Mix well and mold on plate (fondine) 90 g.
Bake at 83°C with 70% humidity for 20-25 minutes. Allow to cool.
Dish composition
Season the surface with lime peel, polypodium root, coffee powder and very little citric acid.
