Anchovies and Mackerel Soup | Riccardo Camanini

Recipe by Riccardo Camanini | Anchovy and Mackerel Broth

Ingredients for 4 persons

  • 380 g fresh mackerel
  • 2.5 l water
  • 66 g of parsley
  • 52 g ginger
  • 45 g shallot
  • 32 g of anchovy drippings

 

Procedure

Starting cold, combine all ingredients (except anchovy drippings) in pieces and simmer for 10 to 15 minutes. Add the drippings off the heat and strain with etamine.
