Recipe by Riccardo Camanini | Anchovy and Mackerel Broth
Ingredients for 4 persons
- 380 g fresh mackerel
- 2.5 l water
- 66 g of parsley
- 52 g ginger
- 45 g shallot
- 32 g of anchovy drippings
Procedure
Starting cold, combine all ingredients (except anchovy drippings) in pieces and simmer for 10 to 15 minutes. Add the drippings off the heat and strain with etamine.
