A simple, slightly retro recipe—but are you sure you know how to make it right? Pasta alla vodka requires a long simmering time, plus a strategic pinch of chili powder. Here are Casa Merlò’s tips for making it.
Ingredients for 4 people
- 300 g pancetta
- 125 g tomato sauce
- 3 g chili powder
- 150 g heavy cream
- 40 g vodka
- 50 g butter
- 500 g wheels
Finely chop the pancetta and sauté it until all the fat has rendered out.
Separate the liquid fat and add the tomato sauce. Simmer for 20 minutes.
When the pancetta ragù is ready, melt the butter in a pan with the chili powder; once it’s fragrant, add the vodka and flambé. Once all the alcohol has evaporated, add the pancetta ragù and the cream, and cook for 10 minutes.
Turn off the heat, and once the pasta is cooked, toss it in the sauce.
