Aurélien Cohen is a French pastry-chef who has turned his passion into a complex art: playing with shapes, textures and flavors, he has created experiential desserts. Social media led him to become known and to open his boutique in Asnières-sur-Seine.
Born and raised in the parisian region, Aurélien Cohen initially trained in marketing and worked in various fields before discovering his true calling. After five years of college, he decided to change course and enrolled in an intensive pastry course to become a CAP Pâtissier.
After graduation, he began his career as a commis pâtissier in Neuilly-sur-Seine, initially for a renowned tea salon, where he had the opportunity to help create the menu; this experience led him to deepen his vision and open his workshop in Asnières-sur-Seine in 2019, which includes a gourmet boutique and a masterclass studio. Cohen used the blog, initially launched as a "chef doudou", to showcase his creations and attract the attention of a community of enthusiasts.
In 2022, he published his first book, Architexture de la Pâtisserie, which collects his most iconic recipes, paying particular attention to the construction and combination of textures in desserts; the Tartelette Miss Vanille and other intricately designed preparations reflect his precision. This work has established his reputation and unmistakable style, and he is often invited to international events such as the Salon du Chocolat in Paris, where he regularly demonstrates his skills.
