Recipe by Carlotta Delicato: Smoked Leek. Using few ingredients for a very tasty vegan dish that plays with textures to expand the flavor nuances of the vegetable.
Ingredients for 2 people
- 2 leeks
- Extra Virgin Olive Oil to taste
- Salt to taste
- Pepper to taste
- 2 tablespoons of Romesco sauce
Method
To get the ash effect on the leeks, place them in the oven at the highest temperature to burn the green part off. Once the leeks have taken on a burnt appearance on the surface (with black dots), clean them and store the burnt part in a bowl. After cleaning the leeks, wrap them in foil and add a pinch of salt, pepper and oil (to taste). Close the foil and bake the leeks in the oven for 30 minutes at 200°C. Remove from the oven and blend one of the leeks until creamy.
Heat a skillet over high heat and cook the other leek on the skillet. Once the leek is toasted, make a cut down the center lengthwise. Arrange the cut leek on the plate and pour the cream of leek into the slit. Add two tablespoons of romesco sauce, salt, pepper, and extra virgin olive oil.
