Antonio Biafora's recipe: Beef, Kiwi, lettuce
For the beef
- 1 sirloin of beef
- Extra-virgin olive oil to taste
- salt to taste
- garlic, rosemary, thyme sage and bay leaf to taste
For the rub (optional)
- 4 g dehydrated sage
- 4gr dehydrated thyme
- 4gr white pepper
- 4 g salt
- 1 g garlic powder
- 2 g dehydrated rosemary
For the marinated lettuce
- 2 romaine lettuce leaves
- 150 g extra-virgin olive oil
- 80 g lemon juice
- 10 g salt
For the kiwi
- 1 kiwi
Procedure
Remove the sirloin from the bone, sprinkle with the already mixed rub (alternatively, only salt), cook the meat in a pan with oil and seasonings.
After cooking, let the beef rest in a warm room at 50° (even in the turned-off oven is fine)
Wash and clean the lettuce. Prepare the marinade by dissolving the salt inside the juice and adding the oil. Place the lettuce in the marinade and leave overnight to marinate in the refrigerator. Dry the lettuce.
Peel and dice the kiwi fruit.
Dish composition
Cut the beef and place it on the plate, adding maldon salt on each piece. Arrange the marinated lettuce and kiwi cubes.
