Recipe of Giuseppe Iannotti: Tonnato sbagliato
Ingredients for 4 people
- 8 eggs
- 40 ml seed oil
- 40 ml tuna oil
- 8 freeze-dried capers
- 20 ml lemon
- 8 ml white wine vinegar
- 400 g salt
- 400 g sugar
Procedure
Mix salt and sugar, separate the yolk from the white, spread a layer of the salt and sugar mix, lay the yolk on top and marinate for 25 minutes.
Meanwhile prepare mayonnaise with seed oil, lemon juice, tuna oil, one yolk, and vinegar.
After 25 minutes, wash the yolks from the “salt,” lay them in a serving dish, add a quenelle of mayonnaise, and decorate with freeze-dried capers.
