Davide Scabin, born in 1965 in Rivoli, Turin, stands as an eclectic and avant-garde figure in the Italian gastronomic landscape. From his childhood spent in the kitchen to leading various critically acclaimed restaurants, the chef has expanded the boundaries of the culinary sphere, known for his bold experiments and iconic dishes.

Biography

Born to a truck driver father and a cook mother who also owned her restaurant, Davide Scabin began cultivating his passion for food from a young age, working in the family eatery's kitchens and fully immersing himself in authentic Piedmontese recipes. After completing hotel management studies and a brief stint as a cosmetics representative, he opened his first restaurant, Combal, in Almese, Turin, at just 28 years old in 1993. This "modern trattoria," where he began to express his creativity, marked the beginning of a stellar culinary career.

In 2002, Scabin relocated his establishment to a prestigious venue, the Castello di Rivoli, renaming it Combal.Zero. Here, his visionary approach and creative cuisine garnered international accolades, earning two Michelin stars and high rankings in the World's Best Restaurants list. Despite losing a star in 2016, Scabin continued to amaze with his ability to reinterpret tradition in a futuristic key.

His most famous dish, the Cyber Egg, is a "theatrical variation" on the theme of the egg (to be incised with a scalpel before tasting) that combines technique and imagination, demonstrating his skill in reinterpreting culinary classics. After the closure of Combal.Zero in 2020, Scabin continued to make his mark on the culinary scene, leading the establishment at the Mercato Centrale in Turin and ultimately becoming the Executive Chef of Ristorante Carignano in Turin.
