Recipe by Terry Giacomello:Soft Potato

Ingredients for 4 people

  • 100 g of mannitol
  • Potato-shaped silicone mold
  • 120 g of potatoes
  • 20 ml of cooking water
  • 40 g of cream
  • 10 g of butter
  • Maldon salt to taste
  • 5 kg of bones
  • 5 kg of meat
  • 5 kg of vegetables

Potato Foam

Take 120 g of potatoes, peel them, and cook them in boiling water. Set aside 20 ml of cooking water.

Take the boiled potatoes, add 20 ml of cooking water, cream, butter, and a pinch of salt and make a puree.

Meat Base

Proceed with roasting the bones and meat scraps together with the vegetables. Cook everything for 4 days, then after this phase, proceed with filtering the obtained mixture and reducing it until obtaining 60 ml of base.

Take the meat base, spread it on a tray, and let it gelatinize.

Potato Wrap

Pour the mannitol into the silicone mold, let it cool, and extract the wrap from the silicone.

Plate Composition

Fill the mannitol wrap with the potato foam using a siphon. Place a previously cut meat base sheet on the potato. Flame with a torch, add Maldon salt.
