Ivan Maniago, a rising star in the culinary world, pursued his passion for cooking from a young age. Against all odds, he embarked on a remarkable journey, working with renowned chefs and garnering valuable experiences. With his own restaurant, Impronta d'Acqua, Ivan has established himself as a prominent figure in the gastronomic landscape, captivating diners with his talent and creativity.

van Maniago, born in 1986, ventured into the world of gastronomy at the age of 14, initially out of boredom but soon discovered his passion for cooking. Against his parents' wishes, he enrolled in the IAL AVIANO Hospitality School, where he graduated in 2005.

His career provided him with opportunities to work in some of Italy's most prestigious kitchens, allowing him to collaborate with renowned chefs such as Gualtiero Marchesi, Massimo Bottura, Massimiliano Alajmo, and Philippe Leveille. Particularly, Alajmo and Leveille encouraged Ivan to forge his own path in the culinary field.

After completing his studies, Ivan gained valuable experiences working at Miramonti l'Altro in Concesio, Brescia (2 MICHELIN Stars), and at Calandre in Sarmeola di Rubano, Padua (3 MICHELIN Stars). He then moved to Lord Nelson in Chiavari, Genoa, where he was awarded the prestigious "Cappello" in the Ristoranti Espresso Guide in 2015.

From 2015 to 2017, Ivan worked at Antica Corona Reale in Cervere, Cuneo (2 MICHELIN Stars). The birth of his daughter brought him back to Liguria, where he had already settled with his wife, Romina.

In Cavi Ligure, Ivan finally found the ideal space to bring his vision to life with Impronta d'Acqua. He reunited with four talented individuals with whom he had previously collaborated, sharing the same enthusiasm and passion. Today, Impronta d'Acqua has become an established presence in the gastronomic scene, thanks to the dedication and expertise of Ivan Maniago and his skilled team.
