From Brescia's bakeries to the MICHELIN Guide's Green Star for sustainable gastronomy, Riccardo Scalvinoni is a talented chef who balances fatherhood with his professional life. Riccardo champions the culinary excellence of his native land, combining tradition, embers and mortar, with modern elements, remnants of his previous experiences.

Born in Brescia in 1982, heir to a family of bakers, Riccardo Scalvinoni gained experience during an internship at the starred "Osteria Povero Diavolo" by Piergiorgio Parini, and then working at the "Osteria della Zia Gabri" in his hometown.

A loving partner and father of two children, a boy and a girl, he was hired as a chef by the Agosti siblings in March 2020 at "Il Colmetto". Launched in 2016, the agritourism was listed in the restaurant guides of both L'Espresso and Gambero Rosso when Riccardo arrived. In 2022, the restaurant began to gain even more recognition, winning the Macaron award from the MICHELIN Guide and then a Green Star in 2023.

The chef says, "Il Colmetto is a restaurant where we pay a lot of attention to product processing, with interesting and non-trivial dishes. Made with raw materials that are 80% inside the farm and the rest supplied by friends who share our vision. I see our Green Star as a message for those looking for different ways to emerge or can't understand why they don't get the Star."

In July 2023, Riccardo took part in an initiative of the Urban Trade District of Brescia (DUC) which, in collaboration with "Brescia nel piatto", launched the " Ambasciatori del Gusto " (Ambassadors of Taste) project. Riccardo and the brothers Alex and Vittorio Manzoni from the "Osteria degli Assonica" (One MICHELIN Star) conducted some master classes for the sector’s professionals at CAST Alimenti to promote the gastronomic excellence of Bergamo and Brescia (Italian Capital of Culture 2023).
